Ledge Top Farm is looking into microgreen production. Microgreens are high nutrient density greens that are in they first few days of germination. At this stage they are nutrient rich with much higher levels than at any stage of their life. These high levels of nutrients are used up in the plants as they get older. So getting them to you as soon as they are ready assures their peak value.

We are starting ginger harvesting this week. You will get the bulb at the base of the plant, the stem and leaves attached. The leaves can be steeped for tea and the stems can be used as a stir fry. All parts have strong ginger flavor. Just picked ginger has much more flavor than the “fresh” ginger you can by in stores
