Fall is fast approaching, and so are our fall crops here at Ledge Top. We are having a great season for winter squash so far, with plenty of beautiful and LARGE butternut squash coming in! We have butternuts ranging from 2 lbs all the way up to 5 lbs! As the temperatures drop and you look for a hearty way to warm up, roasted butternut squash soup is a great way to nourish yourself. Cook up some kale chips from our red russian kale to add a nice crispy garnish or side.
Cherry tomatoes and valencia heirloom tomatoes are still coming in strong. If you haven’t tried them yet, valencias are a vibrant yellow heirloom tomato that are very low in acid giving them a super sweet flavor. Tomato seconds are still available for purchase in bulk for $1 per lb, with a 5 lb minimum on purchases.
